Job Description

Whitsons, a rapidly growing company in the food service industry is in search of capable, reliable and motivated Research & Development Chef for our production facility. The Whitsons Research and Development Chef is charged with formulating and testing new products and supplies by conducting consumer testing, observing market trends and modifying recipes.

REQUIREMENTS:

• Minimum 2 years experience working in manufacturing kitchen
• Culinary Arts degree preferred
• Serve Safe Certified
• Technical thinker, strong mathematics and analytical understanding
• Cooking skills/Recipe adherence
• Understanding of sanitation standards
• Extensive physical demands including, but not limited to, lifting up to 40 lbs., bending, pushing and pulling

DESCRIPTION:

• Assist R&D Director in running department
• Follow directions thoroughly through creation and development process
• Keep accurate and organized inventory of projects in warehouse areas
• Data collections for: yield analysis, shelf life, organoleptic testing
• Familiarity with culinary techniques and terminology
• Strong grasp on cuisines and flavor profiles from various cultures and areas of the world
• Strong understanding of nutritional values of ingredients and their impact on recipes
• Knowledge of food cost analysis
• Comfortable with culinary math
• Development of BOM within the given Cost, Nutritional and operational constraints
• Follow an X3 Bill of Material in order to create, and replicate recipes and IPM’s
• Familiarity with equipment throughout the plant in order to complete day to day assignments
• Package and ship sample product to customers as per request.
• Control quality of products through tasting and observation of recipes through production.
• Perform all other duties as assigned.
